Main Dishes
Masoor Dal
A simple, warming red lentil dal simmered with ginger and turmeric, finished with a toasted-cumin tadka, fresh coriander and a squeeze of lemon.
Method
- 1
Wash the lentils really well until the water runs mostly clear. Drain.
- 2
Add to a pot with the 3 cups fresh water, turmeric, ginger, hing and green chili.
- 3
Bring to a boil, then simmer until the lentils are cooked.
- 4
Meanwhile, heat the ghee in a pan. Once hot, add the cumin seeds and cook until toasted.
- 5
Add the sliced onion and cook until soft and cooked through.
- 6
If using red chili powder, add it at the end and don’t let it sit in the hot oil too long.
- 7
Pour the infused oil into the cooked dal and give it a stir.
- 8
Add salt and stir well. Let it sit on low heat for a couple of minutes — add garam masala now if you want.
- 9
Garnish with fresh coriander and a squeeze of lemon.
