Coconut Chia Pudding Bowl
A creamy, make-ahead chia pudding made with light coconut milk and collagen, ready to be topped with fruit, yogurt, and crunchy seeds.

Method
- 1
Mix the base: in a large bowl, whisk together the coconut milk, chia seeds, maple syrup, vanilla extract, pinch of salt, and collagen powder until fully combined and no clumps remain.
- 2
Set in the fridge: place the bowl in the refrigerator for 20–30 minutes to set. After setting, give it a good stir to evenly distribute the seeds.
- 3
Assemble & serve: scoop the chilled chia pudding into individual serving bowls. Customize each bowl by topping with a dollop of yogurt, a spoonful of sugar-free jam, fresh fruit, and a sprinkle of crunchy nuts or seeds.
